HOW TO POACH CHICKEN BREASTS
Poaching chicken is the easiest and most consistent way to prepare chicken breasts for nachos. This recipe works for one chicken breast or ten. Just make sure you find an appropriate-size pan to fit the chicken.
1. Put the chicken breasts in a saucepan or large pot, and add water to cover.
2. Over high heat, bring the water to a boil, then reduce the heat to a simmer.
3. Cover the pot and simmer the chicken for 10 minutes.
4. Remove the pan from the heat and leave the chicken in the pot to finish cooking in the hot water for 10 to 15 minutes more.
